How to make this.
3 large eggs
½ tbsp Olivo Porcini for coating the pan
More Olivo Porcini to stir into eggs while cooking and for drizzling when serving
Beat eggs in bowl with salt and pepper to taste.
Coat non-stick pan evenly with Olivo Porcini.
Pour egg mixture into pan, keeping heat on medium low.
As eggs start to cook, use a rubber or wooden spatula to “pull” the cooked parts towards the center.
Drizzle 1 tbsp of Olivo Porcini bit by bit as you repeatedly move the spatula around the edge of the pan.
Cooked scrambled eggs will gather in the center of the pan.
Turn off heat when scrambled eggs are 90% cooked (neither runny nor browned).
Serve scrambled eggs on a slice of good toasted wholegrain bread. Drizzle a little more Olivo Porcini, optionally.
