How to make this:

4 servings

  • 3 medium eggplant sliced into 1/2cm wheels
  • 3-4 large beef tomatoes sliced into 1/2cm wheels
  • 2 cups cooked brown rice
  • 120ml extra virgin olive oil (EVOO)
  • 80g Pecorino Romano shaved
  • 6-8 fresh garlic cloves - smashed and peeled
  • 1 tsp dried oregano
  • 1/2 tsp cumin powder
  • 1/2 tsp smoked paprika 
  • 1/4 tsp chilli flakes
  • Salt and black pepper
  • Thick balsamic vinegar for serving

 

  1. Pre-heat oven to 200C and evenly coat rectangular glass baking dish with extra virgin olive oil to prevent too much sticking.
  2. Season eggplant slices with cumin, smoked paprika, chilli flakes, salt and 4 tablespoons of EVOO. Make sure well-coated and set aside to season.
  3. Season tomato slices with oregano, salt, black pepper and 2 tablespoons of EVOO. 
  4. Toss cooked brown rice while warm with salt, black pepper and approx. 20-30g of grated Pecorino. 
  5. Arrange veggies and rice in alternating stacks. Alternate eggplant and tomato slices in the veggie stacks - as shown in photo.
  6. Embed smashed garlic cloves in the rice and in between the veggie slices.
  7. Tip on the remaining veggies juices into the dish.
  8. Drizzle the remaining EVOO generously all over the top and grated the rest of the Pecorino evenly over top - this step creates the delicious crispy bits. 
  9. Place dish in centre rack of the oven for 40 minutes until veggies are soft and top is golden brown and crisped!
  10. Serve with a drizzle of thick balsamic vinegar and enjoy!

  

Tips:

You can add with zucchini slices in the alternating veggie stacks. Season zucchini as you do with the tomatoes. For a more classic Mediterranean style, skip the cumin and smoked paprika and use a mixture of Italian seasoning for all veggies.
